    This looks SO delicious and reminds me of one of my favorite recipes for curried carrot bisque. I’m definitely going to try this out during our next cold snap in San Diego. Thanks!

      You are very welcome. It’s sort of a root vegetable mish mash, but all of them have a hearty sweetness and if you keep it on the thicker side, it really is filling….which in my opinion is hard to come by with soups. Let me know how it comes out for you when you make it.

    This sounds terrific. I also will try this soon. I just bought some coconut oil, I saw it on Dr. Oz and will try to substitute it for butter when ever I can. This is my kind of soup and is not very fattening besides being very healthy for you. You will love your immersion blender. I try and make at least 1 soup a week. Thanks for the inspiration.

      coconut oil is great! but it does have the most subtle of flavors….olive oil has a little flavor too, but it’s just one that we’re so used to. You’ll like it I’m sure.

    I always say I will make soup and I never do! If a recipe looks simple and I can picture the cold rainy day that has the time for me to hang out in the kitchen and make it…you’ve done this – thank you! I also love substitutions because who wants to hunt around for what they don’t have on hand. Creativity begins in the kitchen.

      You’re so right about creativity beginning in the kitchen. some of the best meals I’ve had started with a can of chicken broth, some butter, and a quizzical look at the pantry. This soup was certainly a melting pot of vegetables that shared “color” as their common denominator. Let me know if you try it out.
